No Bake Fruit and Tahini Slices ![]() Ingredients: - 125g (4½oz) Suma dried apricots, chopped 125g (4½oz) dried pears, chopped 4 heaped tbsp Meridian organic tahini 75g (2½oz) Pertwood porridge oats 25g (1oz) Clearspring almonds, ground 4tbsp Suma sesame seeds for topping (optional) Method:- These bars are both delicious and easy to prepare. They are based on dried fruits, nuts and oats with no added sugar. They make the perfect alternative to sugary sweets and will be a great hit with children. Bursting with fruity flavours with a wonderful creamy, smooth texture from the Meridian Organic Tahini. Rich in antioxidants to support the immune system and by including tahini you are providing essential fatty acids and additional nutrients including B vitamins for energy, zinc for healthy brain function and calcium and magnesium for bone health. A great pick-me-up treat, perfect for lunch boxes or a healthy snack on the go. Step 1 Place the apricots and pears in a food processor and process slightly to break them up into small pieces. Add the tahini, porridge oats and ground almonds and process until the mixture begins to clump together to form a soft pliable ‘dough’ – this will take 3-4 minutes. If it is too dry add a couple of drops of water. Step 2 Turn the mixture out on to grease-proof paper or a non-stick baking sheet and gently roll out the dough to form a rectangle shape, about 1cm thick. Sprinkle over some sesame seeds, if wished and press down lightly into the mixture. Turn over a repeat with some more sesame seeds. Step 3 Keeping it on the grease-proof paper place it on a baking tray. Cover and refrigerate for at least 3-4 hours or overnight before cutting into small bars. Store in an airtight container in the refrigerator for 4-5 days. Variations:- Vary the dried fruit according to tastes: raisins and dates work well together or try peaches and pears. Nut Free: Omit the ground almonds and increase the porridge oats to 100g. Sweets: Instead of rolling the mixture into a rectangle, take walnut size pieces of the dough and roll them into balls then roll in some sesame seeds. Place in little petit four cases to make a healthy alternative to chocolates and truffles. |
