St Patrick's Day
 

March the 17th is the feast day of St Patrick and marks the anniversary of his death in the fifth century. Traditionally Irish families would attend church in the morning and celebrate in the afternoon, when for one day the prohibitions of Lent would be cast aside and everyone would eat, drink and make merry. With this in mind we've got a recipe for Barm Brack, the traditional Irish tea bread as well as a glut of the Mood Food Company's greens...


Barm Brack -
The night before soak 200g of mixed dried fruit such as a combination of Nakd's Amazin Lemon raisins and Urban Fresh black cherries in hot tea (the equivalent of one pot), we used Yogi tea Rooibos. Cream 1 teaspoon of fresh yeast with 1 teaspoon of sugar and then add 125ml of luke warm milk, set aside in a warm place for the yeast to start to ferment. Meanwhile, sieve 250g of plain flour with 50g Fruisana and a pinch of mixed spice into a bowl. Rub in 75g of softened butter. Make a well in the centre of the flour and add the yeast mix and 1 beaten egg. Beat with a wooden spoon until a dough begins to form, then carefully work in the strained mix of Nakd's Amazin Lemon raisins and Urban Fresh black cherries as well as a pinch of salt. This is best done with your hands to avoid breaking up the fruit. Knead the dough and then place in a bowl, cover and set aside in a warm place until doubled in size. Knead again lightly and then place in a lightly greased 15cm cake tin and set aside once more to allow to rise. After 30 minutes, pop in a preheated oven at 200C for 45 minutes. When you remove from the oven glaze with some warmed Agave Nectar, enjoy sliced hot or cold.
