In Season : Oranges
 

Rich in vitamin C and a source of protective bio-flavonoids oranges support heart health especially when eaten whole, including the pith and skin.  The high vitamin C content of oranges helps with the body's absorption of iron so combine orange segments with spinach for a nutritious salad or drink a glass of Fruit Hit orange juice with a breakfast packed with nuts and seeds such as Lizi's Original Granola.


Orange& Almond Cake (Serves 6-8)


Heat the oven to 180C and grease and line an 18-20cm cake tin.  Put 4 egg yolks in a bowl with 150g Zylosweet and whisk until pale and creamy. Stir in 175g ground almonds, two packets of Nakd Amazin orange raisins, ½ tsp cinnamon and ½ tsp baking powder as well as the juice and zest of 1 large orange. In a separate bowl whisk 4 egg whites with 1 tablespoon of Zylosweet until they form firm peaks. Add a third of the egg white to the cake mixture and stir in, then add the remaining whites and gently fold.  Pour into the cake tin and bake for 45-50 minutes until risen and golden. Leave to cool and enjoy sliced with a dollop of natural yogurt or crème fraiche.
