In Season: Chicory
 

Chicory or endive makes an ideal accompaniment to meat and savoury dishes because its natural bitterness stimulates the liver and aids fat digestion. Rich in bone-building nutrients, chicory supplies good levels of vitamins C and K as well as calcium and phosphorus.  The red variety is particularly beneficial because it supplies protective anthocyanins which also possess anti-aging properties.


Chicory Salad
- take 3 heads of chicory and separate the leaves placing them in a large salad bowl, add 100g watercress leaves (without the stalks) and 3 large raddichio leaves. Toss the leaves together. Pour 3 tablespoons of flaxseed oil, 1 tablespoon of red wine vinegar and a little seasoning together in a jam jar, shake to combine and pour over the leaves. Sprinkle with 60g Munchy Seeds Chilli mix and serve with a portion of Maharani rice with fish or meat.
