In Season : Brussels Sprouts
 

Much maligned but a true super food - sprouts are not just for Christmas! 


Although an annual feature on our festive dinner plates the Brussels sprout receives a lot of bad press but in its defence the sprout is something of an unsung hero or to coin the latest marketing term a true "super-food". Sprouts are rich in potassium, phosphorus and magnesium as well as the vitamins A, C, E, B6 and folate. It is the ideal vegetable for our modern hectic lifestyle because unlike most vegetables
the sprout retains much of its nutritional value despite storage, processing and cooking.  Just like the cauliflower and cabbage the sprout enjoys an enviable reputation as an important anti-cancer food with just one sprout supplying all the anti-cancer glucosinolates that would be found in a whole cabbage or broccoli - surely enough to persuade even the most ardent of sprout haters!


Spicy seasonal sprouts
- bring a large pan of water to the boil and then add the sprouts cooking for about 5 minutes. Drain the sprouts and run under cold water, then drain again. Heat a little coconut & olive oil in a pan and gently sauté some chopped parma ham, remove from the pan and add 30g of Munchy Seeds chilli mix, gently warm and then remove from the pan and place with the parma ham. Add the sprouts to the pan with a splash of water; cover and leave to cook for 5 minutes, stirring occasionally. Uncover and add back the parma ham and seeds and sauté for about 2minutes. Serve immediately sprinkled with fresh coriander.
