IN SEASON: Cherries

Summer is such a fabulous time of year and even more so because of the fresh seasonal fruits especially those luscious cherries. Packed with the antioxidant vitamins A and vitamin C as well as beneficial flavonoids, cherries help support cardiovascular health and offer anti-inflammatory properties. There is one particular variety of cherry that is worthy of special note and that is the Montmorency cherry which contains an arsenal of potent anthocyanins. These cherries are also one of the few food sources of melatonin which helps to regulate our body's natural wake and sleep cycle, so including them in your diet may help improve disrupted sleep patterns.

This is an easy version of a classic Cherry Clafoutis. Preheat the oven to 190C and lightly oil a shallow dish (2 ¼ pint). Gently heat 450g of cherries (pitted) and 2 tbsp of Meridian Organic Blackcurrant spread until the jam melts amongst the cherries. Tip into the dish and sprinkle with the zest and juice of one lemon. Whizz together 50g of plain flour, 3 eggs, 450ml skimmed milk, ½ tsp ground cinnamon and 3 tbsp of Zylosweet in a food processor until smooth. Pour over the cherries and bake for 25-30 minutes. Dust with icing sugar and serve hot. As easy as pie!

reheat the oven to 18o°C and line an 18-cm (7-inch) baking tin with greaseproof paper. Finely chop 110g of Urban Fresh Black Cherries, 55g of Nakd Lemon Amazin Raisins, 55g of Munchy Seeds Vanilla mix, 55g of hazelnuts and mix with 115g of porridge oats, the juice of 1 lemon and 1 tbsp of Fruit Hit Apple Juice. Press the mixture into the tin and bake for about 15 minutes. Cut into slices while still warm.
