Eggs have long been a symbol of new beginnings and at Easter they're a reminder of life renewed. Although we all hope our eggs will be of the chocolate variety on Easter Sunday why not take the egg theme a little further and serve this glamorous but simple starter?


Chalice Olive Tapenade with Quail's eggs and crudités


Ideal crudités include spring onions, radishes and baby fennel (trimmed and halved if necessary). For 6 people you'll need about 12-18 quail eggs, boil these for just 2 minutes and then plunge immediately into iced water. When the eggs are cold shell them and serve with the tapenade and crudités.

 

Roast Spring Lamb with Puy Lentils


Lamb is the traditional roast for Easter Day and Spring lamb is a real treat being more subtle in colour and flavour. Select your joint carefully, choosing leaner cuts if possible.  Add a twist by serving your roast lamb on a bed of Morrocan spiced puy lentils with a sprinkle of chilli seeds. Rinse and drain a can of puy lentils, lightly sauté a finely chopped red onion in some olive oil, add the lentils, a can of chopped tomatoes and some cumin and chilli powder. Finally stir in chopped fresh coriander leaves and sprinkle with chilli seeds before serving as a bed for slices of roasted Spring Lamb.


 

Lemon Cheesecake


Cheesecake is an age old favourite but for a healthier version replace a couple of the ingredients with our healthier alternatives. Our suggestions won't impact flavour but will mean your waistband still has room for that Easter egg!

For a lower calorie option replace the sugar in your cheesecake recipe (weight for weight) with Zylosweet. For a gluten-free base use Against the Grain Organic Ginger Cookies in place of regular ginger or digestive biscuits.  Reduce the fat content by replacing half the quantity of cream cheese with Quark which is available in most good supermarkets. Add some lemon zing by incorporating a tablespoon of Nakd's Amazin Lemon Raisins into the filling mixture and sprinkle a few extra lemon raisins over the cheesecake just before serving.
